Make the best fast-food-style chicken burger ever

It is very satisfying to bite into a soft bun and then get the crunch of a perfectly crisp fried chicken, and it’s even more satisfying if you’ve made it yourself! The reason why fast-food is so appealing is because making this type of food is little labour intensive, but that’s exactly why we shouldn’t eat chips and burgers every day – if we had to make it from scratch we’d probably opt for something easier (and healthier) to make.

That being said, when you make it yourself it is a lot more nutritious than the fast-food version and you control everything that goes in. This is a great recipe to have in your repertoire because it gives you the method to make perfect crisp batter whenever the occasion calls for it.

Ingredients (makes 4 burgers):

  • 4 chicken breast fillets (one per burger)
  • 4 sesame seed hamburger buns
  • 1 litre vegetable oil (for deep frying)
  • Chopped iceberg lettuce

For the batter:

  • 1 egg
  • 1 cup water
  • ½ cup flour
  • ½ cup tempura mix
  • 2 tbsp. corn meal
  • 1 tsp. chicken stock powder
  • 1 tsp. onion powder
  • ¼ tsp. pepper

For the sauce:

  • ¼ cup mayonnaise
  • Sprinkle of onion powder

Method:

  1. Using a meat mallet or rolling pin flatten breasts so they are about 1.5cm thick.
  2. Whish egg and water together in one bowl, and combine all other dry ingredients in a separate large bowl.
  3. Dredge the chicken in the dry mix, then in the egg wash, then back in the dry mix (double coating).
  4. Wrap chicken in plastic wrap a place in freezer for an hour. Refrigerate egg mixture and cover dry ingredients for later.
  5. Remove chicken from freezer and repeat coating process one more time (third coating).
  6. Heat vegetable oil in a large deep pot until ready for frying (drop a small bit of bread in and if it bubbles up the oil is ready). Deep fry the fillets until golden, crispy and cooked through (about 10 minutes).
  7. Meanwhile, cut your buns in half and toast under the grill. Allow chicken to rest for 5 minutes before serving otherwise they will be too hot to eat.
  8. Assemble your buns with bun base, chicken, lettuce then sauce the top bun and place in top.
