Chicken wings are one of the most affordable cuts of meat you can buy, and also one of the easiest to prepare. You can simply bake them as is with a little oil, but if you take a few minutes to marinate your wings for a few hours or overnight, the results are truly impressive.
The marinades below are for 1kg of wings, so if you want to make more just do a little maths.
1. Honey Soy
You don’t need to worry too much about measurements when making this marinade, but here is a rough guide: Place 1kg wings in a large container, place a good half a cup of soy sauce on top, then drizzle with 4 or 5 tablespoons of honey. Splash on some light oil (like sunflower or vegetable) and a large teaspoon of crushed garlic. Close the lid on the container and shake vigorously to coat.
2. Spicy Thai
For those who like their wings a little spicier, try this marinade made with Sriracha: As above, add 1kg of wings to a large container, squirt on at least 4-5 tablespoons of Sriracha for flavour, but if you like it spicier you can add up to 15 tablespoons worth to really coat those wings! Sprinkle on a teaspoon each of coriander powder and ginger powder. This time you need to marinate by hand to really massage the marinade into all areas of the wings.
3. Smokey BBQ
An American staple, they call them Buffalo Wings. To make enough marinade for 1kg of chicken wings, mix 5 tablespoons of tomato sauce with a splash of vinegar, 2 tablespoons of brown sugar, a teaspoon of mustard (any kind), and a teaspoon of onion powder. If you can find it at your local supermarket, buy a small bottle of ‘liquid smoke’ and add a few drops to your marinade to give it a real charcoal finish. As above, coat the wings in the marinade and rub in to cover.
Marinating tips: the longer the better! Overnight is best but a solid 4 hours gives good results as well.
Cooking tips: A super hot oven yields the best results. So crank it up to 220-230 and bake for around 20-25 minutes. But keep an eye on your wings as all ovens are different, and take them out when they look delicious. Let them stand for 5-10 minutes before serving so people can enjoy the flavour without burning their hands and tongue!
Serving tips: serve with a simple garden salad and some plain rice. The fresh salad and plain rice is great to balance out the flavour packed wings.
