Top Christmas Baking Recipes

At Christmas, indulgence is almost obligatory and it’s always great to have a selection of festive cakes and biscuits on hand for unexpected visitors, carol singers, hungry kids and to treat ourselves! Our two recipes will appeal to all ages and will bring a little festive cheer into your household this Christmas.

Reindeer cupcakes

Ingredients

  • 175g butter
  • 165g caster sugar
  • 1/2tsp vanilla extract
  • 2 eggs
  • 110g self-raising flour
  • 150g plain flour
  • 160ml buttermilk
  • 500g brown fondant icing
  • 50g red fondant icing
  • 25g black fondant icing
  • Chocolate-covered pretzels
  • 140g chocolate, chopped
  • 75ml double cream

Method

  1. Heat oven to 160°C/gas mark 4 and line the holes of a 12-hole muffin tin with paper cases.
  2. Beat the butter, sugar and vanilla in a bowl with an electric mixer until mixture is light and fluffy.
  3. Beat the eggs into the butter mixture one at a time. Add half the sifted flours and half the buttermilk and mix on low until just combined. Mix in the remaining flours and buttermilk.
  4. Divide the mixture among the paper cases, smooth the tops, and bake for 25-30 minutes or until lightly golden. Remove from the oven, stand for 5 minutes, and then cool on a wire rack.
  5. To make the ganache, place the cream in a small saucepan and bring to a simmer over a low heat. Put the chocolate in a heatproof bowl and pour the cream over it, stirring until the chocolate has softened and the two have combined and are smooth. Leave to cool until firm.
  6. Ice the cupcakes with the ganache, then with the brown fondant icing. Use the black fondant icing for the eyes and the red for the nose. Snap the chocolate pretzels in half and push them into both sides of the top of the cupcake for antlers.

Gingerbread stars

Ingredients

  • 125g butter, softened
  • 100g brown sugar
  • 125ml golden syrup
  • 1 egg yolk
  • 375g plain flour
  • 1tsp bicarbonate of soda
  • 2tsp ground ginger
  • 1tsp ground cinnamon
  • 1/2tsp ground cloves

Method

  1. Preheat oven to 160°C/gas mark 4 and line to baking trays with baking paper.
  2. Beat the butter, sugar and golden syrup in a bowl with an electric mixer until pale and fluffy. Add egg yolk and beat until just combined. Add the sifted flour, bicarbonate of soda and spices. Using a wooden spoon, stir to combine and then turn onto a lightly floured surface, kneading gently until smooth.
  3. Roll out the dough to 3mm thick and use star pastry cutters to cut out shapes. Place each on the baking trays and bake for 10-12 minutes or until lightly golden. Remove from the oven and leave to cool.
  4. If you wish, you could decorate them using royal icing or simply dusting over some icing sugar.
